I am going to have a little Beltane date with my boyfriend (it just so happens to be our sixth month anniversary as well - how appropriate!). I have seen suggestions for asparagus and meatballs, and while the asparagus works, we are both vegetarians and the meatballs will not.

All I have thus far is asparagus and mead. I'm also looking for some kind of dessert to make.

Any suggestions? Any traditional Beltane foods I should know about?

can you have cake? or can you not eat eggs. they may be come non egg cake recipes for desert Yum. Beltane is for fertility maybe you can make something that symbolizes that like couscous or something with grains

a nice salad of either vegtables or fruit are great most have something to do with fertiltiy , love, sex, vitality and love, also gingerbread...very good for strength and vitality there are also some reallly powerful ediable flowers!! if you are into that!

I found a really nice recepie for rosemary shortbread cookies in the newest Witches Almanac. they are very tasty.

A yummy fruit salad for dessert- melon, strawberries, apple, orange, kiwi and berries such as blueberries, drizzled with runny honey and sprinkled with chopped nuts and almonds _cloud9_ :drool:

I think I got this from allrecipes.com a while back... It's for White Chocolate-Orange Cookies.
Great light and sunny cookies, if you can use the eggs:

INGREDIENTS LIST:
1 1/4 cups butter, softened
1 1/3 cups white sugar
1 tablespoon vanilla extract
1 egg, beaten
3 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
2 tablespoons orange zest
1/2 cup white chocolate chips
(I've added a splash of OJ to these with nice results)

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
Sift together flour, baking powder, salt, and orange zest.
In a bowl of mixer, cream butter on medium speed, adding sugar gradually. Add vanilla and egg. Add flour mixture gradually, stopping frequently to push down from sides of bowl. When flour mixture is thoroughly combined, mix in chips.
Drop dough by scant spoonful onto baking sheet, spacing 1 inch apart, flattening slightly with back of spoon. Bake at 350 degrees F (175 degrees C) 10 to 12 minutes or until beginning to brown. Allow to cool completely on cooling rack.
