I was wondering if there's a 'official path' centered around Inanna or Sumerian/mesopotamian paths.

Yup.
See these, not all are Sumerian exactly, but they involve that area:
These are all threads on MW, some have links for helpful sites too.

Middle Eastern paths (http://www.mysticwicks.com/showthread.php?t=102341&highlight=sumerian)There's Reconstructionalism: Sumerian, Canaanite, Phoenician. Those are the main ones I know about.
There is also other paths such as Wicca where one has Inanna as their patron goddess. Same for Paganism. One could have Inanna as their patron. Or honor within the Sumerian pantheon.

For info on Inanna look though here (http://search.yahoo.com/search?ei=utf-8&fr=slv8-&p=inanna%20goddess).

Maybe you could look into Sumerian reconstructionism, here's a great group, it's for other recons, but the owner is a Sumerian recon, and they know a lot.

There were seperate religions for Sumerians, Elamites, Babylonians, Dilmunites, Assyrians, Akkadians and I don't know that I would call pre-islamic arabian, canaanite, or any other middle eastern religion mesopotamia. Mesopotamia is the land of the Tigris and Euphrates. Are Canaanites and phoenicians considered under this category?

Indeed there is. Actually, around every city there was a different main deity they focussed on in the areas of mesopotamia, canaan and even in Egypt. Though in many ways Egypt was a little more unified, and had less distinct religions that shared a pantheon.
