There are hundreds of different wassail and lamb's wool recipes out there. This is mine which I based on an Old English one that uses Ale:
6 cups of dry cider (Strongbow or Blackthorn is excellent)
1 cup dark brown sugar
4 apples
1 lemon
1 knob of fresh ginger (1 Tbsp of slices)
2 cinnamon sticks
3 cloves
Core the apples and shove a lemon wedge down each hole. Roast the apples in the oven until they are squishy and the skins start losing colour. Pour the cider into a stew pot, add the sugar, remaining lemon wedges, sliced ginger and spices. Bring to a boil.
If you're having a party place the roasted apples in your slow cooker (dutch oven) and pour the hot wassail mixture over them. Plug in the cooker and stick a ladle in for your guests to self-serve. If you will be drinking it right out of the stew pot then add the roasted apples with all their baking juices last. Give the mixture a good stir and ladle it out.
It's very yummy and it didn't last long at my Yule feast. It's also good to make just for you and a loved one to cozy up with on a cold winter night.Anyone else have a favourite wassail recipe? Does anyone wassail trees or their fruit orchards at the solstice?
