  • Recipes for Pesto

    I absolutely love pasta and pesto but I find that the store-bought pesto's are expensive. Also, I tend not to use it up fast enough and half of it gets wasted.

    So do you have any great pesto recipes that you could share for me to make myself? I have lots of home-grown herbs and always have a stock of pine nuts, but I'm not sure exactly what I should be doing with them and how much to use!!! Help!

    It may be that the gulfs will wash us down;
    It may be we shall touch the Happy Isles,
    And see the great Achilles, whom we knew.
    Tho' much is taken, much abides; and tho'
    We are not now that strength which in old days
    Moved earth and heaven, that which we are, we are,--
    One equal temper of heroic hearts,
    Made weak by time and fate, but strong in will
    To strive, to seek, to find, and not to yield.

    ~From Ulysses, by Alfred Lord Tennyson

        I don't know if you'd like it or not but I add lemon juice to my pesto in addition to what that recipe lists. It's yummy.

            I really like spinach pesto with walnuts. I don't like pine nuts at all. Sometimes I'll make a pesto with sundried tomatoes and basil.

            I really like the pestos I see Giada DeLaurentiis making on the Food Network. You can go to www.foodnetwork.com to see them or to simply do a search for pesto.
